Our Story

Chef Maya Santos spent a decade traveling through more than 30 countries, apprenticing in street stalls from Bangkok to Buenos Aires, from Marrakech to Montreal. Every stop taught her something new about the power of simple, bold flavors.

In 2019 she returned home with a suitcase full of spice blends, a head full of recipes, and a dream: one truck that could take you on a world tour without leaving the block.

Rolling Feast was born. Every dish on our menu is an authentic tribute to the streets where Maya learned to cook, adapted for the freshest local ingredients we can find.
